Many people requested the recipe for the "Black bean and Sweet Potato Burritos". I am sorry that it has taken so long to get the recipe to you, but I promise you it is well worth the wait. I have to tell you at first I was a little uncertain as I was making this meal, but the proof of amazingness was in the taste of the first bite. If you try it, I hope you enjoy it as much Jeff and I did. Here is the recipe at your very own fingertips. Just like any recipe, adjust the portions to your liking. Some of these recipes make quite a bit of food. Or if you choose to make the whole portion you can always freeze for later :)
Black Bean Sweet Potato Burritos
- 3 cups sweet potatoes (peeled and diced)
- 1/2 onion (chopped)
Saute' in large frypan in 1 tablespoon olive oil just until tender. Add water or apple juice as needed to prevent sticking
- 2 cups cooked blacked beans (you can also use canned black beans)
- 1 teaspoon ground cumin
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
Add and cook until heated through
- 8 wheat tortillas
- 1 1/2 cup cheddar cheese (shredded)
Divide bean mixture and cheese among the tortillas and roll up.
Place in a 9 x 13 inch pan baking pan. Lightly spray with olive oil if desired. Cover pan with foil and bake at 350 F for 20-25 min. Garnish with sour cream, salsa, and fresh cilantro.
I served Spanish rice on the side. This meal is fantastic. Enjoy!
