Friday night pizza night :)


Jeff said he was craving pizza for dinner tonight.  He suggested making pizza at home instead of doing the usual of calling Pizza Hut or driving through Little Caesars for their really cheap large pizza.  Homemade it is!  This was a perfect opportunity to use my new Kitchenaid Stand Mixer I got for Christmas.  The beast of a machine came with a few recipes, one just happens to be for pizza crust.  I had everything I needed to make a homemade pizza, so the only thing I had to get at the store was pizza sauce. I was so excited to use my new machine.  I fell in love instantly.  It was so easy to make pizza dough.  I never thought you could make a dough without getting your hands all sticky.  Well, I think the Kitchenaid Stand Mixer was the best invention of all time.  It will make creations in the kitchen much, much easier.   Below is the recipe for the pizza dough. Crusty Pizza Dough:

Yields 4 servings
  • 1 package active dry yeast
  • 1 cup warm water (105 to 115 dregrees)
  • 1/2 teaspoon salt
  • 2 teaspoons olive oil
  • 2 1/2 whole wheat or white flour (may add up to 1 cup more)
  • 1 tablespoon cornmeal
Dissolve yeast in warm water in bowl.  Add salt, olive oil, and 2 1/2 cups flour.   Mix dough and knead.  If needed add 1/2 cup of flour at a time.  I only used 1/2 cup to make the dough perfect!
Place dough in greased bowl, turning to grease the top.  Cover.  Let rise in warm place, free from draft, about 1 hr, or until doubled in bulk.  Punch dough down.

Brush 14 inch pan with oil.  Sprinkle with cornmeal.  Press dough across bottom of pan, forming a collar around the edge to hold topping.  Add toppings as desired.  I made a veggie pizza, with peppers, mushrooms and zucchini.

Bake at 450 for 15-20 min.
